Chief Steward / Hygiene Manager
Requisite for application minimum 5 years’ experience in 5 star hotel environment.

Is responsible for managing all back of the house operations, excluding the actual food production.

Responsibilities:

  1. Direct associates in completion of tasks as designated by assignment sheets and/or needs
  2. Kitchen sanitation including strict compliance with Dept. of Health requirements and ordinances
  3. Responsible for the transport of perishable and non-perishable assets between the existing facilities and other locations
  4. Responsible for maintenance of food area including inventory and purchasing
  5. Responsible for developing weekly schedules while maintaining labor costs and labor budgets
  6. Assist with hiring, training, reviewing, disciplinary action and termination of associates within Stewarding department
  7. Oversee requisition of all equipment necessary for events
  8. Oversee maintenance and upkeep of all storage areas
  9. Manage flow of activity in the kitchen during production and during events
  10. Assist with plating out during sit-down dinners as well as setting up and preparing coffee for events
  11. May be required to assist other departments with setting up family-meals/ buffets
  12. Insure departmental safety procedures are being followed

Reservation Officer
  • Processes reservations by Email, telephone or fax.
  • Processes reservations from the sales office, other hotel departments, and travel agents
  • Knows the credit policy of the hotel and how to code each reservation.
  • Creates and maintains reservation records by date of arrival and alphabetical listing.
  • Prepares letters of confirmation.
  • Communicates reservation information to the front desk.
  • Processes cancellations and modifications and promptly relays this information to the front desk.
  • Understands the hotel's policy on guaranteed reservations and no-shows.
  • Processes advance deposits on reservations.
  • Tracks future room availabilities on the basis of reservations.

General:
  • Direct a highly skilled contracting team to develop and maintain supplier relationships.
  • Understand the industry sector size, our penetration and our profit potential of this particular hotel partners/ group within the assigned territory.
  • Hold direct inventory and revenue responsibility on a territory basis.
  • Ensure last room availability and pricing competitiveness.
  • Grow transactions and revenue for assigned destinations.
  • Define team operation processes and delegate task.
  • Initiate sales calls to generate suppliers support, gather market intelligences and meet prospective suppliers.
  • Directly involves in key hotel or chain partner negotiation
Administration:

  • Manage weekly and monthly supplier and internal reports.
  • Regularly review progress against targets to ensure the optimum benefits (revenue, rate parity, availability, margin and conversion) through contracting activities.
  • Manage all supplier data in distribution systems with optimal accuracy.
  • Ensure compliance of supplier data (CRM) in assigned territories.
  • Lead promotional and seasonal activities to drive sales.
  • Ensure team complies with seasonal rate and allotment renewals deadlines.
  • Participate in system development and deployment related to department and suppliers.
  • Organize training of YCS systems for all internal and external users to maximize user base.
Required Skills
  • Fluent in both written and spoken English.
  • Fluent in both written and spoken language(s) of responsible territory.
  • Direct work experience in Maldives
  • Working knowledge of account management.
  • Computer skill essential.
  • Education in Tourism related field is an advantage.
